Spring is here, which means farmers’ markets are bursting with fresh, vibrant veggies—and if you’re a gardener like me, your backyard (or balcony!) is about to come alive. Eating seasonally isn’t just great for flavor; it’s also packed with nutrients, often more affordable, and supports local farmers.
But if you’ve ever bought a bunch of fresh produce only to have it wilt in the fridge before you can use it, you’re not alone. Let’s talk about how to store, use, and even grow your own fresh veggies this season!
Best Spring Veggies to Enjoy:
Leafy greens (spinach, arugula, lettuce) – perfect for salads, wraps, or blended into smoothies.
Asparagus – delicious roasted, grilled, or added to pasta.
Radishes – crunchy, slightly spicy, and great for snacking or tossing in salads.
Peas – sweet and perfect in stir-fries, pasta, or eaten straight from the pod.
Carrots – try roasting them for extra natural sweetness.
How to Keep Veggies Fresh Longer:
Leafy Greens: Store in an airtight container with a dry paper towel to absorb excess moisture.
Carrots & Radishes: Remove the greens (they pull moisture from the root), then store in water in the fridge.
Asparagus: Keep stems in a glass of water, like a bouquet, and cover loosely with a plastic bag.
Herbs: Wrap in a damp paper towel and store in a container, or keep them in a glass of water like fresh flowers.
